So I was going to show you how to make these awesome banana oatmeal cookies and then I realized that I didn’t have any oatmeal. #TCTFAIL So I looked around my pantry and decided to show you how to make these amazing muffins. This recipe is brought to you by my bff, Nicole. Right after I had Paisley, Nic brought me these muffins and I literally devoured them! Thank you Nicole for the muffins and for this simple recipe! Not going to lie, it’s more of a fall recipe, but who doesn’t love pumpkin??
Okay…all you need is a can of pumpkin and a box of cake mix. I think you are suppose to use spiced cake mix, but this is all I had. Now, if you are like me you add chocolate to everything you eat, so it’s always good to have a ginormous bag of chocolate chips around, especially Ghiradelli! YUM!You mix the cake mix and the canned pumpkin together.This is the step where you can add chocolate chips or extra spices or really anything you want to the mix! Spray down your muffin tins (I love to use coconut spray from Trader Joe’s) and spoon the batter out. The whole thing should be 12 muffins or 24 mini muffins. Put them in the oven at 350 for 15 minutes or more if you like them a little crispy. And that’s it! Super easy!
