Raise your hand if you love pancakes!! UMM YES PLEASE! I love me some pancakes. I used to make banana pancakes all the time with my best friend in college. So yummy! We basically tried a ton of recipes or box mixes. Well guess what? I found the easiest, most yummy pancake recipe ever and here it is (I got this from Pinterest)!
I’ll give it to ya straight…you just need a cup of greek yogurt, 1 tsp of baking soda, 1/2 cup of flour and 1 egg. That’s it!
Mix the egg with your cup of yogurt real good….it should look something like this (below). Next add your teaspoon of baking soda and mix. Then, add your 1/2 cup of flour (I used 1/4 of whole wheat and 1/4 cup of white) and mix. It will be light and fluffy.
That is your core recipe. You can add whatever you want to this. I added grounded chia seeds, cinnamon and vanilla. Then of course I needed to add in some bananas. They are kind of hard to put on the skillet. I just take a big spoon and put it on there.
